Tri Roasted Ali Shan

Not too long ago I had a chance to attend a tea class held by John at Stone Leaf Tea. The topic was Taiwanese tea, since he had just returned from travels on that venerable island. When we were there we tasted a tea that was stunning in both its creation as well as its flavors. I recently prepared a tasting at home to try and capture more information.

The tea is a Tri Roasted Ali Shan Oolong harvested last spring, and quite a treasure it is. Probably my favorite style of oolong in recent years is Hong Shui, and this tea reminded me of it instantly.

The aroma permeates the senses. When I take a sip it feels like standing next to a cauldron of roasting nuts in a field of fragrant flowers. Even minutes after the cup is empty, I want to just sit and inhale the scent left behind.

Although this is undeniably a roasted oolong, I definitely wouldn’t call it a “dark roast”. There’s none of that intense charcoal flavor, nor is the roast similar to the autumn-leaf dryness of Yan Cha. There’s none of the fruitiness that accompanies a Phoenix or the honey of a Bai Hao. I can detect the High Mountain characteristics that I’d expect from a greener Ali Shan, but this has so much more character.

The taste reminds me of buttered pecans. Rich and aromatic in both the leaves and in the mouth, this tea has everything. It’s energy is very balanced, neither too bright nor too mellow. Leaves like these show a real skill in both processing and roasting.

This amazing leaf was roasted by Mr. Huang, the brother of Stone Leaf’s main Taiwan tea supplier Mr. Liao. His pretty unique “Tri-Roast” consists of a careful charcoal roasting (a rare skill these days) followed by an electric roast in bamboo baskets and lastly a small electric oven roast. Each of these steps requires a great deal of labor and talent as each roast must be tweaked and adjusted based on the results of the previous one. As Stone Leaf’s owner John wrote to me:

A big part of the skill with roasting is knowing what the tea will be like months AFTER it is finished. It changes so much in that time period…so to have 3 different methods triples the number of variables that are present to change the results.

My entire day noticeably improved after this tea session, and I can still sense the aroma in my mouth several hours later. And what a session it was! Eight infusions in, the liquor was still a buttery yellow-gold. The leaves were like a soup of collard greens, massive and heavy when they unfurled. Not too many full leaf sets were present, but plenty of full leaves that seem to glow like a cedar tree in winter.

Short, Medium, and Long Jing

Recently I had the pleasure to receive a sample set of three 2014 Long Jing (Dragon Well) teas from Teavivre, so naturally I had to taste them all together.

My first impression is that the dry leaves look mostly the same. All have the typical Long Jing blade shape. A few white haired leaves appear in each pile, making all three look like very nice full leaf teas. Their dry aromas also were all very similar: toasty and green — exactly what I expected. I think I wouldn’t be able to tell these apart by dry leaf, which is another good reason to always taste a tea before buying if you can; appearances only go so far.

The first tea I tried was the Premium Grade Dragon Well. I used 80°C water for about 1 minute with my green gaiwan and cups (I used matching gaiwans and cups for each tea so you’ll be able to tell them apart in the photos). I tasted fresh Chinese greens and watercress. The liquor was vegetal, but not overwhelmingly so. There was a roasted taste, almost like popcorn kernels, but I detected no buttery qualities (which you’ll see appear in the next tea). It had a nice full mouthfeel which remained into the second infusion, but the roasted flavor basically vanished at that point; not unexpected for this style of tea. The wet leaves showed about half full leaf sets, half broken and are definitely a darker green than the pair of organic teas that come next.

The second tea of the set was the Organic Nonpareil Ming Qian Dragon Well brewed in my brown gaiwan and cups. The flavor was immediately buttery with less watercress than the previous Dragon Well but with a thicker mouthfeel. There was the same roasted quality, like popcorn, but it was also notably salty, especially in the aftertaste. The second infusion had a little roast remaining, but mostly lost the buttery quality. The wet leaves impressively showed almost entirely full leaf sets. They’re everywhere! The color is definitely a lighter green than the Premium. Perhaps that’s a quality of organic harvesting? More likely it was the amount of sun the tea plants were exposed to during the growing period.

For the third taste I had the Organic Superfine Dragon Well in my white gaiwan and cups. The liquor tasted of young green grass and fresh zucchini. Still quite a good experience, but it was notably more flat tasting with a very short aftertaste. It was not bitter, but there was not much energy to it. The wet leaves also showed very few full leaf sets compared to the other two. They were mostly broken apart, while similar in color to the Nonpareil.

Clearly the Nonpareil (as the name suggests) is the top of the line here. But it’s not fair to say that the other two teas were poor examples of Long Jing; they were actually very good, just not quite at the same level as the Nonpareil. Long Jing is a tea that’s so famous and has so much history that the variety in its production may be greater than any other single named tea out of China. Because of that it’s really nice to have a sample of three notably different — but all well-made — examples of this style.

 

A One Garden Comparison

This month’s offering from Global Tea Hut is a pair of organic teas from Mr. Xie in Ming Jian, Nantou, Taiwan. One is processed as a green oolong, lightly roasted. The other is processed as Hóng Chá (红茶), or what we might call “black tea”. Both sets of leaves were made from the same garden and (I believe) around the same time, which makes this a very interesting comparison indeed.

 

I set up another tasting, much like my post on bi lo chun last week, with two small gaiwans and my small Totoro tea pet to assist us with his invaluable perspective. These two teas are quite different, despite their similar origins, and further demonstrate the profound effect of oxidation, rolling, and roast.

The warmed leaves have a delicious aroma. The oolong smells buttery and with an unmistakably light roast and the scent of chestnuts. The hong cha’s leaves give off a hint of candy sweetness, but mostly smell of dry bark in spring. When I say “warmed leaves”, I mean the leaves in the pot before they’ve been infused. It’s possible I’ve never mentioned this here, but if you warm your teapot before brewing, try putting the leaves into the empty pot just afterward and quickly shutting the lid to let them absorb some of the moist heat remaining. After a few seconds, lift the lid and inhale the aromas of the warmed leaves. This can produce an amazing effect, all before even adding water to your leaves!

Both of these teas have been allowed to grow without pesticides, which means that many of them have been nibbled by small insects before the harvest. This can be a very desirable event. The resulting tea, characterized by the iconic Bái Háo (白毫茶), tends to have a sweet rich flavor like honey. This tea magic is due to several factors including defensive compounds that the plant releases when it is attacked, as well as the beginning of oxidation while the leaves are still on the tree. I can taste the effects in both of Mr. Xie’s teas.

The oolong (infused with no rinse at around 2 minutes) produced a golden liquor. The flavor was buttery with quite a roasted and honeyed aroma in the mouth. The roasting of this tea was clearly done with a lot of skill! The finish was crisp and short, not lasting as long as I wished, but that only encouraged me to make a second cup!

The mouth feel was very pleasant, more light and silky than thick and creamy, but it paired well with the aromatics of this tea. The third infusion brought out something like the flavor of oranges, which perhaps was there before but hidden by the roast. Usually I would say “citrus” here, but in this case that word really didn’t fit; I was really getting the sense of oranges.

The Global Tea Hut article accompanying this tea reads,

The oolong tea is bug-bitten, plucked, withered outdoors, and then indoors, shaken and mixed in piles (jiao ban), withered more, pan fired (sa cheen) to arrest oxidation and kill green enzymes, rolled to break down the cells and further oxidation, as well as to shape the tea (ro nian), and then roasted twice — once to dry the tea and then for a longer time to add flavor and fragrance.

The Hóng Chá’s liquor was a delicate tan, as expected, and the wet leaves had the sweet smell of candy sugar. The taste, however, was very surprising. I was expecting something like either the minty quality of Sun Moon Lake or the chocolate notes of Feng Qing, but instead it reminded me of nothing else but maple syrup. Not that extremely sweet Grade-A stuff or the sugar paste that you find in restaurants, but thick, dark, Grade-B maple syrup fresh from the tree: still sweet, but more like caramel (if you were under the mistaken impression that Grade-A maple syrup means higher quality, you might be surprised to know it’s just a designation of color and season of production).

To quote Global Tea Hut,

The red tea is also bug-bitten, plucked, and then withered indoors, piled on bamboo mats for 12-24 hours. It is then rolled for up to ninety minutes before being roasted dry. … This results in a deeper, darker liquor than the oolong — though less refined.

I only made three infusions of these teas during this sitting, but I think that both could easily have made five to ten with their flavors intact. Neither has full leaf sets, and there were lots of broken leaves and stems (even with the rolled oolong), but this tea does not suffer from that. Based on the appearance of the leaf damage, I’d say the broken ones were in that condition on the plants, not because of poor handling. I also noticed that the cha qi was very energetic. I’ve felt this before with arbor tree sheng puer, where the tea seems to infuse a “wild” energy in the body, but I think this is the first time I’ve felt the same with an oolong and a black tea.

The skill of the farmer is always present in your cup: the growing conditions, the picking, processing and roasting are all equally important. The proof is always in the taste.

A tale of two Bi Lo Chun

As soon as I open the package I know this is going to be a special tea. The aroma of freshly harvested leaves is like clouds and mist floating through the air after a spring rain. I’ve had several opportunities to try 2014 Bi Lo Chun (碧螺春) in the last month and I’ve been really pleased each time. Here I’d like to compare a few that I have in my home: Teavivre and Stone Leaf Tea House.bi_lo_chun_teavivre_and_stone_leafTeavivre’s sample was delicate and beautiful. The silver-green leaves are loosely curled and covered in a glow of fuzz as is traditional for a “Green Snails in Spring” (the usual translation for this tea). This small-leaf style of green tea originates from a mountainous peninsula in Jiangsu province near Suzhou, and that is where this tea was harvested not too long ago. In recent years, Bi Lo Chun made in Taiwan has also become popular and, in my experience, is also very delicious! The key differences I’ve noticed (and I’m sure that there are exceptions) are that Taiwan Bi Lo Chun tends to have slightly larger leaves and the aromas tend more toward oceanic. This makes a kind of sense to me since Taiwan is surrounded by ocean and the original is harvested on a mountain surrounded by a lake (Tai Hu).

 

I infused about 4g of this tea for 1 minute at around 80°C, following my instincts, although the package suggests a similar brew. The result was a transparent jade liquor with a few leaf bits and a delicate aroma that lingers both in the mouth and in the mind. The taste is slightly dry and has an energizing cha qi which doesn’t appear until the liquor reaches the back of my tongue.

My first infusion of the Stone Leaf Bi Lo Chun was made with the same details for the sake of comparison. This tea is made in Taiwan, and as I mentioned above the leaves are larger and darker in appearance with fewer of the white hairs on their surface. The taste and aroma are deep and rich, bringing to mind a Japanese gyokuro, but not quite. Immediately it seemed that while the Teavivre Bi Lo Chun had a vegetal and bright energy quality, Stone Leaf’s was more floral and mellow. What an amazing variety!

bi_lo_chun_wet_teavivire_and_stone_leafTwo more infusions were made of these delicious teas, increasing the time and temperature a bit with each one. Both teas became more cloudy and drier on the tongue, and they maintained their separate qualities: vegetal energy in one cup and floral mellow in the other. I felt as though drinking the Teavivre Bi Lo Chun was walking through a spring field and the Stone Leaf Bi Lo Chun was swimming in a summer pond.

As the infusions progressed, the nuances of aroma began to fade. This isn’t a bad sign for a green tea; indeed it’s quite common for a green to give up its most potent flavors in the first two infusions. Still, the third infusion was just as pleasant, even as the fading aromas evoked a more full bodied mouthfeel. This is the life that tea shows us: dramatic and delicate, comforting and fleeting. We must be present with our cup to notice these things. Happy sipping!

Springtime is Tea Stove Time

The seasons have changed, and with green grass and warm sunshine comes a perfect time to make tea outside. To celebrate the occasion I’ve pulled out my ceramic tea stove and some rather delicious sheng Puer that’s this month’s offering from Jalam Teas.

Of course, in the two seasons since I’ve used the stove, I’ve forgotten somewhat how best to get it going. It’s not the most complex device, but as my previous entries on the subject suggest, if I want to brew tea before too many hours have passed there are some tricks I need to know. Caveat lector: I’m equally unskilled at building campfires, so it’s not just this particular firebending with which I have trouble; I think I was born into the water tribe. I may need to get some practice lighting charcoal this summer.

Thankfully, with some patience and the meticulous skills of my wife, boiling water was not far off. There’s something really magical about heating water on a stove like this. I think because the water comes just to a boil without sending the lid flying across the room. When I’m using a gas range or electric kettle the water tends to get a little out of control. There’s often a sense of, “Oh no! The water is boiling; I need to shut it off before it’s too late!”, especially if there’s a shrieking whistle going off. The gentleness of boiling water on the tea stove seems to me a perfect complement to the essence of a tea ceremony: in the constant sound of the boil and the occasional hiss as a drop of water escapes only to instantly evaporate on the side of the stove, I find a feeling of tranquility and the natural order of things.

 


I don’t have a lot to say about the tea itself, other than that it’s really very delicious for being so young. The liquor is a beautiful amber, and the aroma is woody, but not overly so. It actually seems more oak-like than the cedar scent I expected, and is quite smooth (at least brewed gong-fu style; I haven’t tried any other way). I think that with some age it may produce more bold flavors, but I like the subtle taste and potent energy that it carries. It’s a young, but very dignified Puer and I feel very fortunate to have such a cake.

Jalam’s site names this tea an Autumn 2013 harvest of Meng Hun, from southwest of Menghai county in Yunnan, harvested by the native Lahu people. From the description, I really was expecting a tea that should be stored away for a few years before even sampling, and maybe my taste is unique, but I really am enjoying this cake right now!

From the native people growing and harvesting these leaves to all the fine people at Jalam teas for getting the final product to my door, to the amazing pottery of Petr Novak without whom I would not have this lovely kettle and stove, they are all equally important. Even my water, kindling, and charcoal are derived from the hard work of many humans. Without any one of those people, the tea in my cup would not exist. Drinking tea with mindfulness is paying tribute to all those who provided this day for me. I hope to have many more days like this, and I hope that you do too!

Nan Nuo Shan

Another one of my samples from Jalam Teas was a lovely packet of Nan Nuo Shan (南糯山) Sheng puer. (Caveat lector: normally Jalam sends their tea in 100g cakes, but as I signed up late I received this sample.) I’ve been excited to try this one because I already have a fondness for teas from the Nan Nuo Shan range.

I’ve tasted several teas from this mountain area in the deep south of Yunnan province and, although I don’t believe that there’s any real consistency for tea from a place, I’ve loved every one. There’s something very inviting about the flavors they exhibit. Some kind of “welcome home” sort of energy. And to be honest I haven’t even been that far south in China, so I guess it’s just the tea.

One of my first encounters with Nan Nuo Shan tea was in the market streets of Lijiang, an adventure which I’ve written about before.

These particular leaves have the aroma of mango: fruity, but not sugar-sweet. It’s intoxicating. Even though the leaves are a little broken, they are definitely consistent in size and rather large (even after shipping in a small packet, which is impressive).

Following the instructions on Jalam’s site, I made my first few infusions at 20 seconds and increased the time by about 10 seconds for each subsequent infusion from there. The results were delightful. The taste is something like pine, or like the flavor of eating a raw mushroom: woody with a savory and sweet quality all at once. This held consistently for about fifteen infusions, so I was not disappointed.

Bada Mountain Fermented Puer

I recently subscribed to Jalam Tea’s monthly deliveries, and since the current month’s bing was already sold out, I received a hoard of samples of previous puer selections. Last week I had a go at the Meng Song. Today I tried the 2012 Bada Mountain Fermented (it seems that Jalam refers to their Shou puer as “fermented” and their Sheng as “unfermented” or with no classifier).

Photo Mar 19, 4 56 37 PMFirst I love that Jalam has a whole page and several videos dedicated to each tea. It really makes learning about the tea and its origin a fun experience. Location and skill of the producer are really what sets different tea apart, especially with Puer, but it’s so difficult to learn about those things from even respected vendors, East or West. The best thing is to visit the producer yourself or taste a whole lot of tea to get to know a factory. What Jalam offers is a good compromise: inexpensive, decent amounts of tea from unique regions and a full page of info about where it came from. Stéphane at Teamasters offers a similar experience with tea from Taiwan (mostly oolong), although somewhat less formally. His packages always give the precise location and date of harvest, which is a rare treat.

This Puer really surprised me, which is not easy for a Shou. I did a double sniff-take when I smelled the damp leaves. The aroma was so unusual: really rich in a dark plum sort of way that reminds me more of a black assam than a Shou Puer. Certainly there’s the character of moss and peat that I hope for in such a tea, but this has something more intriguing.

I used a gaiwan to ensure control and I used only 4 grams of leaf since the packaging of the samples caused a little more breakage than would have occurred in a cake. If I were making this from a bing, I would probably use my usual 6 grams and maybe infuse a little longer.

Photo Mar 19, 4 59 52 PMThe taste has some of the bite I associate with Assamica leaf, which makes sense since the cultivar used for Puer is a large-leaf relative of the tea grown in Northern India. But saying it tastes like a black tea is a inaccurate description; it’s not really astringency that I taste — which is what I imagined when I read about the “nice smooth bite” on the package — it’s more of a brightness or zing in the mouth. Even using that term is complicated, though. Usually when I speak of a bright assam black tea, there’s a kick of potency close behind, but there is no kick here. Like the label says, it’s smooth all the way.

After 6 infusions the flavors were still going strong. I could probably drink this tea all day. In fact, I picked it up several hours later and made about 4 more infusions before the taste began to plateau.

I’m not sure that I would head for this tea all the times that I’m feeling in the mood for a Shou Puer. It has fewer of the stomach-soothing properties than my other bings. I would probably enjoy it more as the package suggests, as a morning tea to wake up the mind and body without the potency of an Assam or Darjeeling. Altogether it has been quite a fascinating experience to taste yet another quality that Puer is capable of exhibiting. The world of tea is truly never completely mapped.

 

 

 

Jalam Teas Meng Song Puer

I already have a delicious Meng Song (Bamboo) Puer from Stone Leaf Tea, so when I received this 2012 Sheng Meng Song from Jalam Teas it went right into my pot.

Photo Mar 09, 1 55 41 PMAs you shall see, my first impressions were less than stellar, but in this case it was my fault. I have a fairly small yixing pot I use for my Sheng tea, and it may be that 6g of loose leaf was a bit too much for the size, or possibly the leaves I used were just more broken than I expected (this came in a sample pack and not a cake). Either way, no matter how I tried, the pot poured like a sloth and the taste was chaotic.

The first infusion had the taste of pine sap and a bright yellow liquor. It had the feel of a lot of energy without much focus. The taste immediately dried out the tongue with the bite of ash and the dryness of a walnut.  Jeff Fuchs writes in the tea’s description,

It is a revitalizing tea that hits all points of the mouth and is a tea that isn’t a subtle tea but rather more of a tea that hits the palate with an impact.

“Well, that’s accurate”, I thought to myself, but I strongly suspected that this leaf could do better. Immediately I inspected the inside of the pot. A slow pour is never a good thing and can often be the sign of a poorly-made tea pot (yet another reason a Gaiwan is usually the best idea when tasting a new tea). I knew my pot was sound, so that meant that the leaves were just clogging the filter.

I tried removing a gram or two of leaves from the pot, particularly small sticks and very broken bits. I think this is a step that tasters often miss: if a tea is too strong, it’s easy to just take out some leaf.

It worked! The pour became much more fluid and fast. The fourth infusion began to exhibit flavors of cedar and packed much less of a punch. I pulled out a few more leaves.

At the sixth infusion there were definite fruit flavors appearing, which I had smelled in the wet leaves from the beginning: crisp (not sugary) peach or pears. The tea had gone from explosive to energizing and from brash to delicious!

As with many teas, the trick to finding the best flavor here was achieving a balance between steep time and leaf quantity such that the water has enough time to acquire the flavor of the tea without becoming too strong in the process. This is a tricky equation and often requires some experimentation. Too many leaves or too slow a pour can disrupt the balance. Once I found it, I easily got a tasty ten infusions from this tea before it lost its potency. I hope to drink this again soon, perhaps with a gaiwan to be more fair to the leaf.

Painter’s Roast Oolong

Of all the many, many (read: too many) teas I brought back from Taiwan, the most eloquent was a small unlabeled pouch of rolled oolong carefully hand-roasted by a man in Lùgǔ (鹿谷鄉). As I’ve just sipped the last of that fine vintage, I thought I might tell you the story of where I found it.

Perhaps I should first explain why I think this tea is so special. Certainly it has all the qualities of a first class tea, from its smooth mouth-feel to the blissful aroma of sweet roasted chestnut as the liquor engulfs my senses. Yet those mundane aspects are only one level of the intrigue at play here. What really draws me to this tea is a characteristic that is difficult to put into words. Some people call this Cha Qi (茶氣). It’s something like the energy of the tea.

Photo Feb 24, 2 54 41 PMSome tea tastes great or has a very interesting aroma, but after drinking it I feel unsettled. A tea which leaves me feeling at peace in mind and body is a tea which I consider to have good Cha Qi, and it is a rare thing indeed. This tea has Cha Qi in abundance, and I wonder what it must take to craft such magic from plants. If you’d like to read more about this elusive quality, Stéphane has a good discussion on his blog and TeaChat has one as well, but you’ll probably have to experience it for yourself.

These fine leaves originated in Nántóu (南投縣), the only land-locked county on the whole island. While Taiwan is generally an easy place to navigate with English, smaller regions like Nántóu can make life a little more interesting. As we got off the bus in front of the Lùgǔ 7-11 (they’re everywhere in Taiwan), there was some confusion about our bus tickets. In order to exit the bus, you had to hand your ticket to the driver to prove you had paid for that leg of the journey, but one member of our group had already misplaced his ticket. In the ensuing chaos, we met a very nice woman getting off at the same stop who helped us communicate to the bus driver and resolve the situation.

We only knew of one person in the town, a man who worked at the renowned Lùgǔ Farmer’s Association, but we weren’t sure where we might be able to stay. Fortunately the nice woman at the bus stop (whose English was excellent) led us to a sort of bed-and-breakfast she knew across the street. Apparently the building was also attached to some sort of school for children where she taught art classes. And of course, like many people in Lùgǔ, the owners of the house were involved with tea production.

We immediately started exploring the small and friendly town and learning about its vibrant tea culture. In the last few decades that culture had been in decline until the Farmer’s Association was created to preserve the traditions of the growers, pickers, and craftsmen of the region. At one point we browsed a small tea exhibit at the town hall and the employees there took a keen interest in us. I think that having Americans touring their town was quite a rare thing. Since they didn’t speak much English and our Mandarin was non-existent, they called up someone they assured us could help. As good luck would have it, our friend from the Farmer’s Association walked in the door! He had a busy schedule but told us a little about the town and then promised that he could make more time to chat if we could wait until the following day. Not wanting to take advantage of his kindness, we agreed to spend the rest of the day wandering on our own.

After another hour had passed we found a very interesting shop on the far side of the town. Being able to tell the difference between a shop and someone’s home is often very difficult in Taiwan; they’re frequently one and the same. This place was run solely by a very kind man who clearly knew about tea (his home-made tea station was something to behold) but whose primary activity appeared to be brush painting. He spoke not a word of English, but we sat and enjoyed tea with him just the same, jovially munching on sunflower seeds and observing the varied paintings that surrounded us.

As we were preparing to leave, we wanted very much to purchase some of his really excellent tea but at that point our ability to communicate without words completely broke down, so the painter called someone up on the phone. We figured that he knew someone who spoke English and could translate for us. Imagine our surprise when our Farmer’s Association friend again walked in the door. Apparently he was the one to call if you needed to talk to foreigners, but we felt very guilty for disturbing his work twice in one day.

It turns out that the painter did not actually produce any tea, but would purchase mostly-finished tea leaves from the farmers and then roast it himself in a large electrically-heated bamboo basket: quite an art in and of itself. It was very much an education on the amazing effect that a carefully executed roast can have on a tea leaf. Of course the base tea needs to be of a high quality as well, but by roasting the leaves just enough to engage their mouth-watering fragrance without burning anything, the master of roasting can transform a good tea into an outstanding tea. I have cherished my small bag of “Painter’s Roast” ever since and I hope someday to return to Lùgǔ to pay my respects to that master (and, of course, to get some more tea!).

Gui Fei at Stone Leaf Tea House

Yesterday was a beautiful lazy Saturday, and my wife had the brilliant suggestion to spend our afternoon drinking tea someplace we don’t get to nearly often enough: Stone Leaf Tea House in Middlebury. As we sat and tasted some fine Gui Fei oolong I realized I have never written about this wonderful tea destination, despite it being one of the three nearest tearooms to my home. (Of course, I have written about some of the tea before.)

My favorite part about visiting Stone Leaf is the intimacy of the experience; when I step in the door and look across the beautiful wooden counter, I’m immediately greeted by John (the owner and a friend) or another one of the skillful tea masters who work there. I tend to immediately launch into a discussion about the newest teas on the menu or some new tea pot on display. Talking about the tea helps me to settle into the space as I consider what I’d like to drink that day. I can be very indecisive (there’s so many great options!), but John is very skilled at guiding the conversation toward a specific few teas that I will probably enjoy. I see it happen even with those customers that are brand new to the greater tea world: before they even sit down there’s often already a perfect tea picked out.

To be fair, this sort of skill in tea recommendation is what I appreciate from all of my favorite tea shops. What I think sets Stone Leaf apart is the unhurried nature of the exchange. I know first-hand how difficult it can be to run a tea room and try to give each person the attention they deserve in a shop full of customers. Sometimes it works, and sometimes it doesn’t. This may be just the times I happen to visit, but I’ve never felt a need to hurry up when at Stone Leaf.

Finally, and not the least impressive: the selection of teas is top-notch. Stone Leaf is always importing the freshest tea nearly as soon as it is harvested. John even roasts some of his own oolongs; there are very few tea shops in the West that can claim that skill. I definitely recommend some house roasted Jin Xuan, if you have the opportunity to visit.

The Gui Fei we tasted was gentle and smooth with a really entrancing aroma and a light body. The air around the tea seemed to take on a delicate floral sweetness, like standing in a field of spring blooms: not pungent or overwhelming, but undeniably present and comforting.

The consistency of the leaves was a welcome find. Each rolled ball contained around five full leaves all still attached to the stem. The leaves were of small-to-medium size, but I think that the presence of so many complete leaf sets helped to create the smoothness of the tea. After the fifth or sixth infusion the liquor began to take on a more bold, coconut aroma and flavor. I love a tea that presents a whole new side of itself as the infusions progress.
